Seared Halibut

Halibut is one of my favorite types of fish because it's so hearty and filling. My business lunch colleagues were immediately impressed when they saw the bright colors this dish brought! This recipe may seem extravagant, but it's really simple to make and is guaranteed to wow your guests, coworkers or family. Just look at that color!!

INGREDIENTS

•4 6oz. Pieces of halibut

• 3 tbsp olive oil

•1 bunch broccolini

•4 radishes

•1 bunch chives

•1 can of coconut milk

•0.5 gram saffron

•2 vanilla beans

•Juice 1 lemon

•Salt & Pepper to taste

INSTRUCTIONS

Simmer coconut milk with vanilla beans, saffron, and salt and pepper on low heat for 20 minutes. Bring 2 cups of water and lemon juice to a boil, add broccolini and boil until tender. Add oil to a pan and heat. Add halibut to the hot oil and pan sear with skin side up. Finish in the oven at 375 degrees for 8 minutes. Slice radishes thinly and dice chives. Mix with a touch of lemon juice to garnish your dish with.
