Beef Carpaccio with Arugula Salad

One of my favorite things to do is go visit my local butcher. I have learned so many things about meat over the years all thanks to his knowledge. This dish is so elegant and will brighten up any table to impress guests, or even just the family! I served this at my business lunch meeting and my colleagues were pleasantly surprised to see this elegant dish arrive!



•16 oz. beef carpaccio from local butcher

•1 lb. arugula

•1 tbsp dijon

•1 lemon, juiced

•1 tbsp olive oil

•1/2 bunch parsley

•Salt & Pepper to taste

•3.5oz capers drained


Combine olive oil, dijon lemon, salt and pepper in a bowl to make dressing. Whisk until light and pale in color. Toss arugula and parsley in the dressing. Plate the beef carpaccio and top with arugula salad. Garnish with capers.
