Peach and Tomato Salad

It seems like everyone was making some version of a peach and tomato salad this summer, but I decided to really add some flare. This combination may seem odd at first, but peaches bring out the sweetness in tomatoes and pair perfectly with crunchy cucumbers and then balances out with fresh basil. Talk about the perfect salad for a picnic or cookout. It's the weekend, so share this recipe with your favorite people. You deserve it!

INGREDIENTS

•2 large peaches

•2-3 assorted tomatoes

•½ cup banana peppers

•1 english cucumber

•1 red onion

•1 bunch basil

•¼ cup EVOO

•2 lemons

•Salt & pepper to taste

INSTRUCTIONS

Dice tomatoes and peaches into large pieces. Slice cucumbers into a half moon shape. Dice red onion and combine in large bowl with banana peppers. Add olive oil and lemon juice. Finely chop basil. Add Salt & pepper to taste. If you want to spice things up, you can add a splash or two of balsamic vinegar. Toss everything together and serve cold or at room temperature.

Asparagus and Grapefruit Salad

This Asparagus and Grapefruit Salad has crunch from jicama, spice from the radishes and a bright sweetness from the grapefruit. Literally everything we could ever want from a salad. I love making this at the beginning of the week and saving it for gatherings in or out of the office. Remember - the longer it sits with that lime juice, the better!

INGREDIENTS

•1 cup raw asparagus

•4 radishes

•2 grapefruits

•1 cup jicama

•Juice of 1 lime

INSTRUCTIONS

Chop asparagus into bite size pieces. Chop radishes into a half moon shape. Segment grapefruit. Slice jicama into matchsticks. Combine and marinate in lime juice overnight in the fridge. Serve cold.

Egg Salad Lettuce Wraps

I don’t know about you, but I love anything that is wrapped up and I can eat with my hands (looking at you, tacos). The brightness and crunch from the lettuce perfectly balances out this creamy egg salad. I honestly can’t think of a better meal to bring along for a picnic with friends or a loved one. Who doesn't love a refreshing meal from a picnic basket!

INGREDIENTS

•10 eggs

•2 tbsp capers

•2 tbsp fresh dill

•Red leaf lettuce

•Red onions, diced

•¼ cup Whole30 Approved mayo

INSTRUCTIONS

Bring water to boil & hardboil eggs. Make your own mayo or buy a Whole30 compliant brand. Peel away shell from hardboiled eggs and roughly chop. Add all ingredients and mix together. Add completed mixture to lettuce wraps for a handheld meal.

These wraps are packed with with protein and healthy fats. Nothing better to refuel from a hike or a day out in the sun! Enjoy!

Poached Peaches

Summertime is sticking around just a little bit longer, so I'm trying to make the best of it! It’s @simonhallprivatechef again and I am talking all about peaches. If you know me, you know I love to grill fruit while I am on Whole30, but I have found an even more indulgent method : poaching. You won't believe what a little olive oil can do to this wonderful fruit. Your friends, family and coworkers will LOVE you for this one. Guaranteed. Ps- this recipe can be made all year round with any stone fruit!

INGREDIENTS

•4 peaches

•1 brunch fresh basil

•1 pint raspberries

•3 tbsp olive oil

INSTRUCTIONS

To begin, half peaches, remove pits and place in a cast iron skillet. Drizzle pan and peaches with olive oil. Bake at 350 degrees for 25 minutes, face up. Plate with fresh raspberries and fresh basil.

Serve warm.

Yet another easy recipe that doesn't require a lot of time in the kitchen, but definitely doesn't lack on flavor. Let the ingredients speak for themselves and end on a delicious, light note!

Seared Halibut

Halibut is one of my favorite types of fish because it's so hearty and filling. My business lunch colleagues were immediately impressed when they saw the bright colors this dish brought! This recipe may seem extravagant, but it's really simple to make and is guaranteed to wow your guests, coworkers or family. Just look at that color!!

INGREDIENTS

•4 6oz. Pieces of halibut

• 3 tbsp olive oil

•1 bunch broccolini

•4 radishes

•1 bunch chives

•1 can of coconut milk

•0.5 gram saffron

•2 vanilla beans

•Juice 1 lemon

•Salt & Pepper to taste

INSTRUCTIONS

Simmer coconut milk with vanilla beans, saffron, and salt and pepper on low heat for 20 minutes. Bring 2 cups of water and lemon juice to a boil, add broccolini and boil until tender. Add oil to a pan and heat. Add halibut to the hot oil and pan sear with skin side up. Finish in the oven at 375 degrees for 8 minutes. Slice radishes thinly and dice chives. Mix with a touch of lemon juice to garnish your dish with.

Beef Carpaccio with Arugula Salad

One of my favorite things to do is go visit my local butcher. I have learned so many things about meat over the years all thanks to his knowledge. This dish is so elegant and will brighten up any table to impress guests, or even just the family! I served this at my business lunch meeting and my colleagues were pleasantly surprised to see this elegant dish arrive!

INGREDIENTS

•16 oz. beef carpaccio from local butcher

•1 lb. arugula

•1 tbsp dijon

•1 lemon, juiced

•1 tbsp olive oil

•1/2 bunch parsley

•Salt & Pepper to taste

•3.5oz capers drained

INSTRUCTIONS

Combine olive oil, dijon lemon, salt and pepper in a bowl to make dressing. Whisk until light and pale in color. Toss arugula and parsley in the dressing. Plate the beef carpaccio and top with arugula salad. Garnish with capers.

Watermelon Spritzers

I'm about to show you how to get the party started! These Watermelon Sprizers are my absolute favorite way to have a Whole30 approved celebratory drink. I strongly believe that anything with fresh watermelon will taste amazing, but when you add @lacroixwater or @bublywater to the mix, it's magic. No one will miss the alcohol with these fun mocktails!

INGREDIENTS

•1 watermelon, diced small

•Your favorite flavor of @lacroixwater or @bublywater

•Fresh mint, lime or watermelon slice to garnish (optional)

INSTRUCTIONS

Simply smash the diced watermelon until juiced. Feel free to leave some small chunks! Pour into your favorite cocktail glass, fill only to about halfway and top with your watermelon cubes and juice. Add your choice of garnish.

Green Bean Salad

If you are from the south, odds are your grandma made some delicious green beans that would stew all day with all sorts of other tasty ingredients. I'm taking that inspiration to create a much healthier and simpler version of a green bean salad. My grandma may roll over in her grave if she knew I was blanching green beans for only 5 minutes, but this recipe is a showstopper, so I stand by it!

INGREDIENTS

•2 lbs green beans

•1 pint grape tomatoes

•1 lb. bacon, cooked

•¼ cup red wine vinegar

•¼ cup sunflower seeds

•¼ cup tarragon

•Salt & pepper to taste

INSTRUCTIONS

Bake bacon or fry in frying pan until crispy. Bring water to boil, add green beans and blanch for 5 minutes. Strain green beans and place into an ice bath to stop the cooking process. Cut cherry tomatoes into halves. Roughly chop tarragon and cooked bacon. Add all ingredients to a large bowl and mix.
